Vegan Strawberry Brownies with fresh strawberries, and dark chocolate chips. A fun dessert to combine strawberries and chocolate! 

 

Have you ever stopped and actually done those “10 Questions for Your Girlfriend” quizzes that you swipe through on TikTok?

M and I have, because I think they’re fun. 

It’s a welcome reprieve from doomscrolling an endless “For You” page of trending sounds and videos and an opportunity to interact in an otherwise antisocial sport. 

So, anyway, back to the quizzes.

I mean, who doesn’t want to decide which dog their boyfriend is out of 10 different options or whether they’d choose cookies or brownies for dessert?

These are important questions that demand answers. 

It was during a food-themed quiz that M informed me that he would rather eat brownies over cookies.

“WHAT?!” I shrieked, totally flabbergasted. 

“Yes, over cookies, I would!” he vehemently argued. 

This honestly doesn’t mean a lot coming from my dessert-opposed boyfriend who can eat raw rhubarb and think it’s sweet enough. 

Friends, I don’t think I’ve seen M eat a single brownie during our four years of dating. 

But, apparently he’s a brownie guy. 

So, this brownie recipe is dedicated to the boy I live with who hasn’t touched this pan since I made them. 

That’s OK, because these Vegan Strawberry Brownies are too good to share. 

These vegan and gluten-free brownies are made with fresh strawberries and dotted with dark chocolate chips. 

They’re essentially a chocolate covered strawberry in brownie form! 

what you need to make vegan strawberry brownies

These Vegan Strawberry Brownies are super easy to make with ingredients you probably already have on hand. 

Here’s what you need: 

  • ground flaxseed
  • unrefined coconut sugar
  • neutral nut or seed butter
  • almond flour
  • raw cacao powder
  • Endangered Species 60% Dark Chocolate Baking Chips + more for sprinkling
  • chopped strawberries
  • sliced strawberries

That’s it!

 

how to make vegan strawberry brownies

Preheat the oven to 350°F and line an 8 or 9-inch square baking dish with parchment paper or lightly grease with coconut oil.

In a large mixing bowl, combine the ground flaxseed and filtered water and whisk to combine.

Set the mixture aside for 5-10 minutes to gel.

Next, add in the coconut sugar, almond milk, and nut butter and whisk everything until it’s smooth.

Sift in the almond flour and cacao powder and mix until all ingredients are well combined.

Fold in the dark chocolate chips and chopped strawberries.

Pour the batter into the baking dish and smooth the top with a spatula so it’s in a nice even layer.

Add the remaining sliced strawberries in even rows on top of the brownie surface and gently press in with your fingers.

I like to place mine in 3-4 rows, but you can make whatever shape you’d like.

Be sure not to place them *too* close together so that they’re overlapping, or they will prevent the brownie batter from baking evenly. 

Sprinkle the top with some additional chocolate chips for aesthetics, because, why not?

Bake the brownies for 25-30 minutes, then remove from the oven to cool.

 

do not over bake

This is the number one thing to keep in mind when making this recipe. 

The brownies will appear underdone when removed from the oven, but will firm up while cooling.

Do not overcook them. 

I repeat, DO NOT OVER COOK.

Allow the brownies to cool for at least 30 minutes before serving. 

Once they’re cooler, slice the brownies into even squares with a knife and enjoy!

I find the 60% to be the perfect balance of sweet and bitter paired with sweet strawberries! 

 

how to serve vegan strawberry brownies

These brownies are perfect to enjoy time of year, but I love them in particular during strawberry season. 

I love to bake a pan and enjoy squares for dessert after dinner.

This recipe works best with fresh berries, because frozen strawberries will make the batter a bit too soggy. 

I think they’d be perfect to enjoy for Valentine’s Day, Mother’s Day, birthdays, office parties, or anytime you’re craving chocolate and strawberries. 

Store any leftover brownies in an airtight container in the refrigerator for up to one week.

They also freeze well!

I like to cut mine into individual squares and freeze them in separate bags for a delicious pre-portioned dessert.
